Heart Healthy Pizza Recipe That Actually Reduces Cholesterol

A new type of Cholesterol lowering cheese.

The breakthrough came with the introduction of a new type of cheese, which has all the flavour of a mature cheddar, but can be used as a topping for Pizza or Lasagna. In the United Kingdom this product is known as miniCol. This is a healthy alternative to 'normal' cheese and is perfectly safe to eat or cook with, for people with concerns about cholesterol levels.

The difference between traditional cheddar and miniCol is that miniCol is made from milk, which has had virtually all of its dairy fat removed and replaced with wheatgerm oil, which is high in polyunsaturated fat and plant sterols. Most plants contain Sterols which are natural substances found as component parts of certain vegetable oils. Plant sterols are effective in lowering cholesterol by blocking the absorption of cholesterol from the diet, and also by stopping the re-absorption of cholesterol produced by the liver. Studies have shown that miniCol is proven to be capable of reducing blood cholesterol levels.

You can find out motre information about miniCol here: http://www.emmi-minicol.ch/news/

Pizza Margherita Recipe (enhanced)

This recipe is for a basic 14 inch Pizza Margherita, but you can easily add further healthy toppings such as tuna, chicken or extra lean beef (raw meat to be marinated and precooked). Because you make it yourself you know and control what goes into it. The manufacturers recommended daily amount of miniCol Cheese is 65 grams per person, so the recipe contains 130 grams - enough for 2 servings.

You have two choices for the base - you can either make your own using one of the excellent home bread making machines now available, or buy a pre-made pizza base from the grocery store.

Pizza Ingredients

Dough (enough for 2 Pizzas)

  • Water - 1 cup
  • Strong Bread Making Flour - 3 Cups
  • Dried Milk Powder - 2 Tablespoons
  • Sugar - 2 Teaspoons
  • Low Sodium Salt Substitute - 1 Teaspoon
  • Yeast - 2 ½ Teaspoons

All you need to do to make the dough is to throw all these ingredients into the breadmaker and hit the 'pizza dough' button. An hour or so later you will have a ball of dough ready to roll into a pizza base.

Rest of Pizza

  • Tomato Paste Tube
  • 4 cloves of garlic - finely chopped
  • 1 Teaspoon of Ground Black Pepper
  • Mixed Herbs - 2 Tablespoons
  • 1 Onion - chopped
  • 2 tomatoes- sliced
  • 1 onion - sliced
  • 1 Green Capsicum - sliced
  • Olive Oil
  • 130 grams of 'miniCol' cheese - grated

Assembling and cooking the Pizza

  • Cut the dough ball into 2 halves. You can freeze one half for another time.
  • Spread some flour onto the worktop and coat the dough
  • Use a rolling pin and roll out the dough to the size of the Pizza cooking tray
  • Spread a small amount of Olive Oil onto the pizza baking tray and rub around with some kitchen towel (this will stop the base from sticking)
  • Place the pizza base onto the baking tray
  • Spread Tomato paste from the tube evenly around the pizza base
  • Sprinkle the freshly chopped garlic evenly into the tomato paste
  • Assemble the tomato, onion and capsicum slices evenly around the pizza base
  • Sprinkle the black pepper over the ingredients
  • Spread the grated cheese over the top of the ingredients
  • Sprinkle the mixed herbs onto the top of the cheese - done

The completed Pizza should be baked in the oven at 200 degrees for approx. 10 minutes and served with fresh salad and a glass of red wine.

Presto Pizzazz Pizza Oven Baking Tips

Here are some tips taken from users of the Presto Pizzazz Pizza Oven that will help you get the most out of your pizza baking and eating experience...

1. You don't have to bake frozen pizza only. You can bake fresh or homemade pizza from scratch.

2. Although the Presto Pizzazz Pizza Oven instruction manual recommends baking only pizza -- owners have used it to bake such foods as chicken strips, croissants, potato wedges, quesadillas, hash browns, sandwiches and would you believe even trout?

3. Because the pizza bakes on a rotating pan, which isn't enclosed but in the open, you can add ingredients while it is baking.

4. The Presto Pizzazz Pizza Oven can heat both the top and the bottom of the pizza at the same time or individually. Use this feature to control how you like your pizza -- whether for a crispier crust, browner toppings or both.

5. In general, you should follow the baking times for the Presto Pizzazz found in the instruction manual and listed on the oven itself. But some users have suggested adding up to five more minutes to the baking time.

6. With any nonstick type bake ware, scratches are inevitable. Make sure you use nonstick surface friendly utensils -- rubber or plastic -- to prolong the life of the nonstick pan.

7. Avoid damaging your nonstick pan by transferring the pizza to another plate or surface before you slice it.

8. With the nonstick pan, you don't need to spread it with oil or butter to prevent the pizza from sticking. However, some users suggest brushing it with a teaspoon of olive oil to give the pizza the pizzeria like flavor.

9. The nonstick pan can get very hot, so make sure you use oven mitts and keep it away from small children. You should also allow it to cool down before handling it with your bare hands.

10. The Presto Pizzazz Pizza Oven is inexpensive, so you can buy one for work or as a gift for anyone you know who also loves pizza.

Filipino Recipes - Suman Moron (Dessert) Recipe - Pinoy Food

Suman Moron originated from Leyte, an island in the Visayas. It is a popular Filipino dessert served during fiestas and other special occasions. Luckily, I don't have to wait for any special celebrations to taste this delicacy because these are commonly sold outside the church during Sundays.

This recipe makes about 30 pieces of Suman Moron 4-inches long each.

Dessert

Ingredients:

  • 2 cups glutinous rice flour
  • 6 cups ordinary rice flour
  • 2 kilos grated coconut meat
  • 1 big can evaporated milk
  • ½ kilo white (refined) granulated sugar
  • 1 kilo muscovado sugar
  • 30 chocolate tableya, melted with 1/4 cup water
  • 1 bar cheddar cheese (julienned)
  • 1 cup chopped peanuts
  • 1 small bottle vanilla extract
  • 8 cups boiling water
  • about 30 pieces banana leaves, cut into rectangles (8″x10″)

Filipino Recipes - Suman Moron (Dessert) Recipe - Pinoy Food

Cooking Instructions:

  • In a basin, place the grated coconut meat and pour boiling water. Set aside. (Note: 8 cups of canned coconut milk can be used as alternative.)
  • Mix the 2 types of flour well until thoroughly incorporated. Divide the flour mixture equally into two parts.
  • Squeeze the grated meat when the coconut mixture is already cool enough to handle. Use a fine strainer to separate the coconut milk. Divide the coconut milk equally into two parts.
  • In a thick-bottomed pan, place ½ of the flour mixture and pour in one part coconut milk, muscovado sugar, melted chocolate, vanilla extract and peanuts. Mix well and place over medium heat. Keep on stirring while cooking the mixture. At first, uneven lumps will form. But as you keep stirring, the mixture will even out as it thickens. Turn off the heat when oil starts to come out. Set aside to cool.
  • To the second half of flour mixture, add the remaining coconut milk. Then pour about half of the white sugar and the evaporated milk. Mix thoroughly. Place in a separate pan and cook over medium heat while stirring continuously. Remove from the heat when the mixture is thickened. Set aside to cool.
  • Pass the banana leaves over the heat to make them supple. Then use the squeezed-dry coconut meat over the leaves.
  • Take a heaping tablespoonful of the first mixture (chocolate) and place on the banana leaf wrapper. Sprinkle a little cheese on it before rolling, with the banana leaf covering the mixture. Therefore, you hands won't be touching the mixture being rolled.
  • Take another heaping tablespoonful of the second mixture (milk) and do the same process.
  • Place the two cylinders (milk and chocolate) and roll to form a thicker cylinder with the two colors fused together.
  • Roll the banana leaf to wrap tightly and tie a string at both ends to secure.
  • Repeat the process until all of the two mixtures have been wrapped.
  • Steam for about 45 minutes to 1 hour.
  • Let cool before serving.

The History of Pizza Hut

The history of Pizza Hut began in 1958 when Frank and Dan Carney opened the first store in Wichita Kansas. Frank and Dan were brothers and best friends. In 1958, they asked their mother to borrow 600.00 and they successfully started the now world renowned restaurant called Pizza Hut. The brothers decided that they wanted the word pizza in the name of the restaurant and since the place itself reminded them of a hut, they came up with Pizza Hut. They based their business on quality and customer service and proved to succeed with both.

In 1964, the brothers decided to change the look of Pizza Hut and they erected the buildings that are universally recognized and related to the Pizza Hut name. In 1970, the history of Pizza Hut made a huge move. Pizza Hut was now publicly traded on the New York Stock Exchange. In 1973, Pizza Hut opened its first doors off of American soil. Japan, England, and Canada all housed the first of the international Pizza Hut businesses. In 1977 a huge company named Pepsico merged with Pizza Hut and Frank Carney still remained the leader even with the merged companies. He decided in 1980 it was his time to leave and pursue other personal goals and opportunities. By 1986, there were one hundred restaurants in the United Kingdom and five thousand establishments world wide. The business was really starting to flourish after pan pizza got introduced six years earlier.

Pizza

The early 90's consisted of many delivery and restaurant stores opening throughout the United Kingdom and Russia. In 1994 there were over ten thousand Pizza hut open for business world wide. In 1997, PepsiCo decided to focus solely on their drinks business (Pepsi) which resulted in the foundation of Tricon Global Restaurants. Tricon Global Restaurants is known today as the largest restaurant brand in the World. Sicilian pizza was also launched in the United Kingdom in 1997 and proved to be a huge success. In the year 2000, Pizza Hut introduced a new type of pizza called The Edge. This pizza was very unique and unlike any other pizza available. It was a thin pizza with toppings all the way around the edge.

The History of Pizza Hut

The history of Pizza Hut made a big step forward in 2003 when it was made public that 500 restaurants were now open in the United Kingdom employing a total of over 20,000 people. In 2004 the Big New Yorker Pizza was introduced to the public which proved to be yet another successful and desirable pizza. 2005 brought the launch of the bigger and larger 4 for All pizza. Just this year Pizza Hut came out with their garlic crusted pizza and a larker 4 for all.

Secrets to Great Homemade Pizza

A pizza is the sum of its parts; namely, the pizza crust, the pizza toppings and the pizza sauce. Make each one as wonderful as you can make it and you'll be assured of turning out the best homemade pizza possible. Try out the following secrets when you make your homemade pizza.

Pizza Crust Secrets

Pizza

Bake your pizza crust separately: It would be best if you can bake your pizza crust first before you add on the toppings and sauce. There's one good reason for doing this. If you bake the lot at one and the same time, you may end up with a pizza that has overcooked toppings, burnt cheese and an undercooked, flat crust. Of course, you should not bake your crust fully the first time so that you won't end up with a pizza that has a burnt crust after your final baking stage.

Secrets to Great Homemade Pizza

Mixing pizza dough ingredients: Begin by putting in a bowl at least one-tenth of the warm water specified in your homemade pizza recipe. Add yeast gradually to the water, stir and let it stand for a few minutes. Meanwhile, in a separate bowl, put the remaining warm water, stir in the sugar and salt (if your recipe calls for these ingredients) and the other dry ingredients except the flour, add the water and yeast mixture, stir the lot then immediately add the rest of the ingredients.

Kneading the pizza mixture: Kneading will let air mix with your pizza dough mixture. You should knead the pizza dough only until it reaches the proper consistency: the dough doesn't stick to the container and individual portions can be stretched without breaking. Over-kneading will result in brittle pizza dough. While kneading the dough, use flour to prevent the mixture from sticking to your hands and the bowl, but use as little flour as possible.

Let your pizza dough rise before using it: After kneading your pizza dough, you must give it enough time to rise to your desired thickness. Generally, the longer the fermentation time you allow your pizza, the better the taste of the pizza crust. However, be careful not to use too much yeast if you are going to let the dough rise for hours (say you prepared the dough in the morning and let it relax for the rest of the day in preparation for baking by day end).

If speed is of the essence: If you need the pizza dough as quickly as possible, you can let it rise faster by adding more yeast to the mixture or by increasing the temperature of the dough. To do the latter, you can heat your oven for a few minutes, turn it off, cool the oven off a bit by leaving the oven door open for a few seconds, put the dough in a covered bowl, put the bowl in the oven and close the door. Let the mixture stay in the warm oven for at least 30 minutes, take it out, softly press the dough down then repeat the "rising" exercise for another 30 minutes. Another technique that you can apply for a faster fermentation period is to use warm water. The higher the water temperature, the faster yeast action will be. Just a note of caution, however, the pizza dough which has been allowed to ferment longer using minimum amount of yeast generally results into a better-tasting pizza crust so it's best that you mix and knead your dough hours before you actually need it.

Frozen homemade pizza dough preparation: If you have prepared pizza dough the night before and left it in the refrigerator for next day's baking, take it out in the morning and let it rise for at least several hours before you use it. Again, the less the yeast used, the longer the rising period required.

To make a thin pizza crust: If you are aiming for a thin crust pizza, you will want to use less dough per pan. You can also just stretch your pizza dough more on the pan. Doing this will naturally reduce the crust thickness.

To get a thick pizza crust: For a thicker crust, you need to use a pizza pan with a smaller circumference, use more pizza dough per pan or stretch out the dough less. The result would be increased crust thickness.

To get a crispy pizza crust: For a crispy pizza crust, it would be best if you reduce the amount of water. Drier pizza dough usually means a crispier pizza crust. Stiffer pizza dough also means crispier crust so it would be best to use flour with high gluten content if you want a crispy crust.

For a soft and gooey crust: To get a soft and chewy crust, you need to add more water to your dough mixture or use less flour. More moist pizza dough means softer pizza crust. To achieve better results, use flour with low gluten content. You may make gluten-free pizza dough by using gluten-free flour

If you live in a high-altitude location: Be mindful of the effect of high altitude on pizza dough. A higher altitude means less air pressure so the dough will rise faster, and it means a faster rate of evaporation so the dough will dry out faster. Thus, if you are in a high-altitude location, it is generally advisable to use more water and less yeast in your pizza dough mixture than you would normally use if you were in a low-altitude location.

Pizza Toppings

Simply speaking, the pizza toppings you should use depend on the type of pizza that you want. Fresh mozzarella cheese is necessary if you want to make a New York pizza. New York style pizza is typically minimalist; that is to say, they use as few toppings as possible. On the other hand, a Chicago deep dish pizza is usually loaded with meaty toppings: pepperoni, beef sausage, pork sausage, ground beef, bacon, ham, etc. You will also see bell peppers, mushrooms, and different kinds of cheese on a typical Chicago pizza. Tomatoes, cheese, anchovies, garlic, and herbs like basil and oregano, on the other hand, are typical of Italian pizza. California pizza, on the other hand, is characterized by seasonal vegetable toppings, fruit toppings, chicken pizza toppings, smoked salmon toppings, and other unusual toppings.

For great economy: Use pizza toppings that you already have on hand. Bacon, ham and sausages left over from breakfast, for instance, will make great toppings. Innovate depending on what ingredients you have. Naturally, cooked toppings will require less time in the oven so be sure to take this into account when baking your pizza.

Fresh toppings: It is recommended that you use fresh ingredients for your pizza toppings. Use fresh mozzarella cheese, if possible.

Finger crush herbs: To release the flavor of dried herbs, it is best to finger crush them before you add them to your pizza.

Drain and dry toppings: To avoid getting a soggy pizza, especially if you are using lots of canned and moist ingredients, you should drain your toppings of excess moisture before you arrange them on your pizza base.

Pizza Sauce

Your pizza sauce will give your pizza its distinctive flavor. In the web, you can find a lot of easy pizza sauce recipes to follow. You can even try making your own trademark pizza sauce.

Easy pizza sauce recipe: There should be canned, pre-mixed pizza sauces available in your local supermarket. On the other hand, you can use spaghetti sauce as your pizza sauce. Another easy alternative would be to sauté some onions and garlic in extra virgin olive oil, add tomato sauce (chunky tomato sauce is fine or tomato paste/puree diluted with some water), add salt (and crushed pepper if preferred), let the sauce simmer then add basil and oregano. You can even add some balsamic vinegar if you wish. You can also add some cooked ground meat to your sauce if you prefer.

Thicker sauce is better: Use thick pizza sauce on your pizza. Too watery pizza sauce means a soggy pizza. If you are using canned pizza sauce, evaluate the thickness. If too thin, let the sauce simmer before using it on your pizza.

Pizza sauce on top: When cooking your pizza, it is advisable to put the sauce on top. This will prevent your cheese and other ingredients from burning.

Lots of tropical fruits grow in Cuba, including bananas, mango, soursop, pineapple, tamarinds, coconuts and guava, which means that fruity desserts are especially popular.

Well loved Cuban desserts include rice pudding and merenguitos, which are sweet meringue puffs. Torrejas are like French toast. They are sweet fried bread slices served with syrup and raisins. In Cuba, French toast is served for dessert rather than breakfast. Cubans also like to make cookies and pastries using the locally sourced fresh fruit. Fruit turnovers and parfait desserts are really popular there.

Dessert

Flan, which is also known as creme caramel, is very popular in nearly all Spanish speaking countries, including Cuba and Mexico. This delicious egg custard is flavored with vanilla and has a smooth, silky texture.

An Easy Recipe for Boniatillo

This sweet potato pudding is popular during the holidays in Cuba. The pudding is flavored with cinnamon, cream, lime juice, vanilla and more and everybody will love the delicious flavor of this wonderful and traditional Cuban dessert. Chill it for a couple of hours or serve it hot. It tastes great either way! This recipe makes enough to serve four people.

What you will need:

  • 2 cups brown sugar
  • 1 1/2 lbs sweet potato
  • 2 limes
  • 1 stick cinnamon
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 3 egg yolks
  • 1 tablespoon butter
  • 1 tablespoon vanilla extract
  • 1/8 teaspoon ground cinnamon or grated cinnamon stick
  • Water, as needed
How to make it:

Peel and chop the sweet potato and cover it with water in a pan. Add a teaspoon of salt and boil it for twenty minutes or until tender. Drain the potato and mash it using a fork, blender, or food processor.

Peel the limes and save the fruit for another use. Put the peel in a big pan with the brown sugar, cinnamon stick, and two cups of water. Cook the mixture over a moderate heat until it reaches 250 degrees F, stirring it all the time. You will need a candy thermometer to gauge the temperature.

Take out the peel and cinnamon and turn the heat down to low. Add the mashed sweet potato and keep stirring the mixture until it is smooth. Take it off the heat. Beat the cream, butter, egg yolks, and a pinch of salt until smooth, and then add this to the sweet potato mixture.

Cook it over a low heat for a couple of minutes, then take the pan off the heat and stir in the vanilla. If the mixture is too runny, you can mix a quarter cup of cornstarch with a quarter cup of water and add this. Divide the sweet potato pudding between serving bowls and garnish each one with a little ground cinnamon.

If you enjoy Cuban food, you will also enjoy making easy Mexican recipes. South American desserts, and Mexican food desserts especially, feature a wide range of delicious ingredients such as chocolate, fresh fruit and more, and they finish off a meal perfectly.

A white pizza, known a pizza bianca in Italy, is a pizza without tomato sauce. Sour cream, pesto or another sauce is often used in its place. Sometimes a white pizza does not have any sauce on it at all.

Along the east coast of the United States, white pizza is simply topped with ricotta and mozzarella, drizzled with olive oil and then spices such as garlic and fresh basil are used to garnish it and add more flavor.

How To Make Mouthwatering Mexican White Cheese Sauce

Mexican white cheese sauce or queso blanco is easy to make and so many people enjoy using it for dipping chips or slathering over one dish or another. People of all ages love the creamy texture and the spicy taste of this sauce. \"Pizza Recipe\"

What You Need

How To Make Mouthwatering Mexican White Cheese Sauce

  • 2 teaspoons vegetable oil
  • ½ finely diced onion
  • 3 minced garlic cloves
  • ¼ cup butter or margarine
  • ¼ cup flour
  • 2 cups milk
  • 1 teaspoon ground cumin
  • 1 can drained chopped green chilies
  • 1 can drained chopped chipotle chilies
  • 1 cup grated Monterey Jack cheese
  • Salt and pepper to taste

How to Make It

Using a medium size saucepan over medium heat add the vegetable oil and then saute diced onion while stirring frequently to prevent burning for 5 to 10 minutes or until it is translucent. Stir in the garlic, reduce heat to low or simmer and cook for 5 minutes. Set aside until needed.

Next, you will make the roux while using a 2 quart saucepan on low heat. Add the butter or margarine and allow it to slowly melt. After melting the butter or margarine add the ¼ cup flour and stir while using a whisk.

Increase the level of heat slightly in order to bring this mixture to a slow bubble while constantly stirring for approximately 1 minute.

Gradually add a small amount of milk at a time and continue stirring while increasing to a medium heat. Continue whisking for approximately 5 to 10 minutes as the sauce thickens.

Reduce heat and then add the onion and garlic mixture, cumin, and the chilies while stirring until well blended. Add salt and pepper to taste and mix well by whisking.

Remove from heat and gradually add the grated cheese. Using the whisk you will stir in each handful as you add the cheese until melted. Continue adding the cheese a handful at a time and stir until the mixture is well mixed and creamy in appearance.

You can serve this immediately with tortilla chips. If you want to keep the sauce warm enough for dipping place it in a small crockpot on low heat and cover with the lid until serving.

Sensational Side Dishes For Pizza

Pizza is of course a meal in its own right and side dishes are strictly optional. However, it can be nice to serve tasty side dishes with pizza. Garlic bread is popular, as are dough balls and other high calorie snacks. If you want something healthier you could serve a mixed salad with your homemade pizza recipe. This could be a fruity salad with sweet ingredients like chopped pineapple or peach as well as the lettuce and tomato or a green mixed leaf salad.

Corn on the cob is another good idea if you are making pizza. If you are going all out and making homemade pizza, why not make a few tasty side dishes to go with it? A homemade pizza is an extra special meal from the delicious homemade pizza dough right up to the toppings and sauce.

\"Pizza Recipe\"

If you are going to take the trouble to make a pizza yourself, making one or two side dishes will make the meal even more impressive and memorable. There are side dishes you can make ahead, like salad, which are fine in the refrigerator until you are ready to serve your pizza.

Sensational Side Dishes For Pizza

The Best Side Dishes

Garlic bread is a great side dish because it is so easy to make. Just mash some garlic into butter, spread it on a French baguette and broil or bake it until it is hot and golden brown. A salad is also easy to make and you just need to toss your salad ingredients together.

If you think about famous pizza outlets like Domino's, you might think about cheese bread sticks or buffalo hot wings. These might be good side dishes to order if you want to relax with a takeout or if you want to eat at a pizza restaurant but when you are considering a home-cooked meal, the pizza should be the main focus, rather than high calorie side dishes which fill people up before they have had a chance to enjoy the pizza properly.

Recipe for Zucchini and Bacon Salad

If you are serving up home-cooked pizza for your family, you might want to serve a healthy salad on the side. Homemade pizza can be healthy, especially if you use a healthy whole wheat pizza dough recipe and lots of vegetable toppings but there is no harm in serving up a nutritious salad alongside it as well.

The following salad recipe features cheese and bacon to tempt everyone into having some, as well as nutritious onion and zucchini. This makes enough to serve eight people. Feel free to substitute natural yogurt for half the mayonnaise to lower the fat and calorie counts.

You will need:

  • 2 zucchini
  • 6 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 red onion, chopped
  • 1/2 teaspoon tomato puree
  • 1 cup mayonnaise
  • Dash Worcestershire sauce

How to make it:

Fry the bacon until it is crispy then drain it on paper towels. Cut the zucchini into bite-sized pieces. Mix it with the crumbled bacon, onion and cheese. Stir the Worcestershire sauce and tomato puree into the mayonnaise, and then combine the zucchini mixture with this dressing. Chill for an hour and serve with your favorite homemade pizza recipe.

Sensational Side Dishes For Pizza

Homemade side dishes are the perfect accompaniment to homemade pizza. If you make your own pizza, rather than reheating a pre-packaged frozen pizza, you get to choose every part of the recipe. From the type of pizza dough you choose right up to the sauce and toppings you can design your very own pizza. Use the best ingredients and you can make a wonderful pizza dough recipe topped with an incredible sauce and your family's favorite toppings. Homemade pizza is a real treat and it is easy to make too.

Vanilla and Rum Sauces Make Holiday Desserts Special

My mother's parents were English and many of the meals she fixed for us reflected this heritage. Christmas dinner was always roast beef and Yorkshire pudding. Dessert was always plum pudding with warm sauce. There are many recipes for plum pudding and all are labor intensive. Mom made plum pudding from scratch a few times, but it was so much work she finally bought Crosse and Blackwell pudding imported from England.

The plum pudding was served with warm vanilla or rum sauce. I did not like the rich pudding, so I only ate a spoonful. But I could have eaten an entire bowl of sauce. Mom also served apple pie with warm vanilla sauce. The combination of warm sauce and fresh pie from the oven was heavenly. With a couple of changes the vanilla sauce recipe becomes rum sauce or rum-raisin sauce.

\"Dessert Pizza \"

I have lightened the recipe by using Splenda Blend for Baking instead of sugar and elminating the half cup of butter in the original recipe. However, I have added a tablespoon of butter for flavor. Warm vanilla and rum sauce turn simple cakes -- vanilla, apple, and spice -- into special desserts. Top frozen waffles with vanilla ice cream and sauce and you have one of the best desserts on the planet. Garnish with a twist of orange peel and fresh mint to make your holiday desserts more festive.

Vanilla and Rum Sauces Make Holiday Desserts Special

WARM VANILLA SAUCE

INGREDIENTS

1/2 cup Splenda Blend for Baking

2 tablespoons cornstarch

1/2 teaspoon light salt

2 cups hot water

1 tablespoon butter (no substitutions)

2 teaspoons pure vanilla extract

dash of freshly grated nutmeg

METHOD

Combine the Splenda Blend for Baking, cornstarch, and salt in a small saucepan. Whisk in hot water. Cook over medium heat, stirring constantly, until sauce has thickened. Remove from heat. Add vanilla extract and nutmeg. Makes 8 servings.

WARM RUM SAUCE

Omit the vanilla and nutmeg. Make the sauce and remove from heat. Add 2 teaspoons of rum extract.

WARM RUM-RAISIN SAUCE

Omit the vanilla and nutmeg. Add 1/4 cup raisins to the sauce and cook until thickened. Remove from heat and add 2 teaspoons of rum extract.

Does Mozzarella Cheese Go Bad?

All cheese goes bad, but it all goes bad in different times and in different ways. It is important that you properly care for the cheese that you purchase and store it correctly so that it will stay for as long as its shelf life allows. Cheese that isn't taken care of properly will end up going bad and will be unsafe to eat. If you take care of it, you may be able to get more shelf life out of your cheese and use your mozzarella cheese to the end of the ball, loaf, of whatever other form it came in.

Fresh mozzarella or the buffalo mozzarella has a much shorter shelf life than the other kinds of mozzarella cheese. It is important that you use this mozzarella cheese up as quickly as you can. This cheese has not been aged, so it doesn't have the same shelf life as the ones that have been aged properly. It is important with fresh mozzarella that you use it up in a couple of days. If you see mold on this kind of mozzarella cheese or if you see that it has an odd smell to it, you are going to want to toss it.

\"Pizza Recipe\"

If you are purchasing mozzarella like part skim or the whole mozzarella that has been aged and through the entire cheese making process, it will have a longer shelf life. This mozzarella cheese lasts longer because it has been through the aging process which basically helps to create a little more preservation. This cheese will not last forever, but it will last a lot longer than the mozzarella that is fresh. Even with this mozzarella, if you see some mold on it, it is still OK to eat. But, you will want to be sure that you properly remove the mold, which means cutting it out and ensuring that there are no mold spores left on the cheese, it will still be good to eat as long as the mold is all gone.

Does Mozzarella Cheese Go Bad?

Long answer short, mozzarella cheese does go bad, but it will last for a while depending on the kind that you get. Your fresh mozzarella is going to go bad a lot quicker than the mozzarella that has been aged. But, with proper storage in an airtight container and proper refrigeration you may be able to extend the shelf life of your cheese. Know when your mozzarella goes bad.

Best Fresh Salsa Recipe

Here is the best salsa recipe I have ever made.

My family does not even like regular jar or store bought salsa anymore. I use to make salsa and cook the ingredients on the stove but once was in a hurry and just used everything straight from the garden, after a little washing. The result was a flavor burst in my mouth with all the wonderful flavors that were not toned down by cooking them away.

\"Pizza Recipe\"

Hope you enjoy and give me your comments.

Best Fresh Salsa Recipe

8 tomatoes

3 green peppers

4 jalapeno peppers (you can remove some or add some depending on your taste)

1 small onion

Garlic cloves or minced garlic

salt

Olive Oil

Parsley

Lemon or lime juice

Cut off the tops of the green peppers and remove seeds. Cut off the tops of the jalapenos but do not remove seeds. Cut the outer skin off the onion and cut in four sections.

Place these items in a food processor and run until everything is small. I usually do not leave big chunks of the jalapeno as small chopped bits blend better and give flavor throughout the salsa.

Drop in 1 teaspoon on minced garlic. You can use the stuff out of the jar from the store or put in 2 whole cloves.

Wash the tomatoes and cut off the tops and cut them in half our fourths and put them in the food processor on top of the already chopped up peppers and onions.

Process these until the tomatoes are well chopped. Open the food process and remove the container and put a strainer in your sink and pour the mixture from the processor into the strainer and let strain all the excess liquid from the tomatoes. I usually use my well washed hand in their to stir up the salsa and speed up the process but you can use a big spoon. When Most of the excess liquid is gone dump the strainer mixture into a bowl or container.

Add 1 teaspoon salt, 1 tablespoon dried parsley, 3 to 4 tablespoons lemon or lime juice. I prefer lime juice but once ran out and used lemon juice and it worked just as well. I use the bottled juice but it you have fresh it would be even better. Add 2 tablespoons of extra virgin olive oil.

Stir everything together with a spoon and quickly get out your chips and get some because as soon as your family knows you have homemade salsa made it will not be around for very long.

Vegetable Side Dishes To Serve With Fish

If you are planning to serve fish for dinner, what about making a tasty grilled vegetables recipe to go with it? Most fish is delicately flavored and if you want to make an impressive dish, you might like to make a colorful vegetable side dish to go alongside the fish.

Actually, you can choose from baked, sauteed, steamed, or grilled fresh vegetables. If the weather is good, you might like to make a grilled corn recipe or some vegetable kabobs. You can grill the fish at the same time. Alternatively make the meal indoors.

\"Pizza Recipes\"

Weight watchers will love fish with grilled vegetables because it is such a healthy dish yet a delicious one. Diet food does not have to be boring and you can season most fish delicately with a squeeze of lemon or lime juice and some black pepper. There is no need for fattening creamy dressings when you serve fish or seafood.

Vegetable Side Dishes To Serve With Fish

Couscous And Roasted Bell Pepper Salad

Boil a cup of couscous according to the instructions on the box. That usually means using twice as much water as couscous and a pinch of salt. Couscous takes about fifteen minutes to get soft. When most of the liquid is gone, take it off the heat, and put the lid on. Let it sweat for ten minutes.

Put it in a colander, rinse it with cold water to get the starch off and let it drain. Puree three roasted or grilled red bell peppers and add a couple of tablespoons of yogurt, a bit of salt and a tablespoon of olive oil. Finely chop a cup of sweet pickles and add these.

Pour most of the red bell pepper dressing over the couscous and stir well. Peel and grate a pair of carrots and add these. Cover and chill. Bring the salad back to room temperature to serve it. You can add some more dressing if you like. This would go well with baked cod or tilapia.

Cajun Potato Salad

This recipe serves four people. Cook two pounds of peeled potatoes and cut them into chunks. Chop four green onions and add these. You can reserve some of the sliced green part for garnish, if you want to. You can also add a chopped jalapeno chili if you like, or even two for a very spicy side dish.

Combine a tablespoon of mustard with three quarters of a cup of yogurt, a teaspoon of Cajun seasoning, and a dash of cayenne pepper in another bowl, and then season this dressing with salt and pepper.

Toss the potatoes and green onions with the Cajun dressing and sprinkle the remaining green onion over the top. Serve this delicious vegetable recipe with blackened salmon for an easy gourmet meal.

Zucchini With Corn And Lemon

The mixture of dill and lemon in this recipe is really good and this side dish would go well with any fish entree. Saute a thinly sliced zucchini with half a chopped onion and quarter of a teaspoon of dill weed in a tablespoon of butter in a pan.

Add a fifteen ounce can of drained whole kernel corn and a couple of teaspoons of lemon juice and warm everything through before serving. This recipe might sound simple you will be surprised how perfectly balanced and flavorful it is.

How to Make Venison Bacon

Bacon is one of life's best indulgences. The smell, the taste...it doesn't get better! Unfortunately, if you want venison bacon, you'll have to make it (or have your meat processor do it). Deer are lean, and therefore don't have enough belly fat to produce anything like pork bacon. But you can mix venison with pork, spice it right, and have tasty fake bacon. You can use it just as you would pork bacon-either adding it to recipes or eating it plain. Here is the best recipe I've found so far. I don't know who originally came up with this recipe, but I'm grateful every time I eat it!

You will need a meat grinder (or grinder attachment) and smoker, which are essential cooking tools for venison lovers!

\"Pizza Recipe\"

For 25 lbs of venison bacon, you'll need half venison and half pork trimmings (50% meat/50 fat). If 25 lbs sounds like a lot of bacon, remember you can freeze it.

How to Make Venison Bacon

The spices and cure are what really make the venison bacon tasty, and preserve it. Buying a pre-made spice kit is the easiest way to go about making sure you have the right blend. Just about any place that sells sausage making equipment and accessories will have a venison bacon kit. The average price is around for a kit that produces 25 lbs of bacon. Not bad!

Before you start, make sure you have about 10 loaf pans ready (foil pans are easiest), cooking spray, wax paper, and a meat thermometer.

First grind the meat; double grind it to make sure the meats are thoroughly mixed. Use the fine blade for the second grinding. Put it in the bowl and add the seasoning and cure, mixing in water (your seasoning kit will tell you how much).

Spray the loaf pans with cooking spray and pack the meat into them. You want the meat to be about 2 inches deep. Cover the pans tightly with wax paper and store in the refrigerator (or the garage if it's cold enough) for 8 to 12 hours.

Spray the smoker rack with cooking spray to prevent sticking. Remove the meat from the pans and place it on the rack. You'll smoke the meat at 130 for 1 hour, then turn up the temperature to 160 and smoke for 2 more hours. After smoking, remove the meat from the rack and put it in the oven at 180 for 4 hours, or until the internal temperature of the meat reaches 155.

Allow the bacon to sit out until it reaches room temperature and then refrigerate it overnight. You can then slice it into strips. Package it into 1 lb packs and freeze for use throughout the year. Enjoy!

Wild Edible Recipe: Sauteed Puffball Mushrooms

Yes! I did it! I love the confident feeling of learning something new.

Until yesterday I was sure of two edible mushrooms. Today I am sure of four. My two new delicacies are the Gem-studded puffball and the Pear-shaped puffball. I have a fifth under study.

\"Pizza Recipe\"

Before I share this recipe, it's time for my disclaimer: ALWAYS test for edibility.

Wild Edible Recipe: Sauteed Puffball Mushrooms

When I gather mushrooms, I put each species in a separate paper bag. When I get home, I take them out of the paper bag and begin my visual study.

The mushroom under study right now is the fawn mushroom. I found one on a hike with "Wildman" Steve Brill last month. I have found it twice since, but did not eat it. I just studied the shape, how the gills were attached and the stem. "Wildman" has made replicas out of Sculpey - which is an excellent way to improve observation skills. It's also fun.

I am cautious enough to consult other mushroom identification guides, but "Wildman" has the best photos and his sculptures are accurate. I am now making a spore print and when I do sample this mushroom, it will be a piece the size of a green pea.

THE RECIPE:

Sautéed Gem-studded (Lycoperdon perlatum) or Pear-shaped (Lycoperdon pyriforme) mushrooms:

1. Remove mushrooms from paper bag, trim dirt and wipe with a cloth or paper towel

2. Do not wash or immerse in water. Do not salt. That makes the mushrooms tough

3. Cut the larger mushrooms into bite-size pieces

4. Coat with olive oil and one-half teaspoon of lemon or lime juice

5. Set pan over low heat, then add coated puffball mushrooms

6. Cook until tender

Puffballs are fragrant when picked and they do have a distinct flavor, but it is delicate. I enjoyed it as a simple side dish.

Christmas Dinner Traditions and Dessert Ideas

Christmas is my family's favorite time of year. We have many Christmas traditions that we've developed over the years.  One is that each year one of us daughters (mother and sister-in-laws) is responsible for a part of the dinner.  My favorite part to make is the Christmas desserts.

Our family is large, there are five sisters, four brothers and both parents still living. We also have a lot of wives, husbands, nieces and nephews mixed in. When we get together there are twenty seven people.  Each year one of us cooks for a different segment. We put the dinner segments in a hat. After dinner, after all the dishes are done and we're relaxing we choose what our dishes will be for the next year. The menu is broken up into appetizers, before and after dinner drinks (for the adults), meat, stuffing/potatoes (starch), vegetables, rolls, desserts. Two people are responsible for meat, two for stuffing/potatoes and two for vegetables. One for appetizers, one for before and after dinner drinks and one for desserts. And, now that there are ten of us every year one lucky girl gets a get out of jail free card, which means she doesn't have to cook the next year!

\"Dessert Pizza \"

As I said earlier Christmas dessert is my favorite. I start cooking about a week in advance. I know everybody's favorites, and like to add a few new things.  I like to make lots of different types of desserts for the family. One of my favorites is Black Bottom Cup Cakes. Another is Greek Almond Cookies. These are super simple. Another favorite is definitely a Red Velvet Cake with Butter Cream Icing. It's my Grandmother's recipe and the family loves it. The Red Velvet Cake is the one thing we're guaranteed to have every year, regardless of who is assigned dessert duty.

Christmas Dinner Traditions and Dessert Ideas

I also make a Cinnamon Crumb Cake, a Chocolate Truffle with Raspberry Sauce and a Louisiana Roasted Pecan Pie.  All of these things make quite an impressive looking Christmas dessert buffet and everyone is able to find something that they really like.

Over the years we girls have shared recipes between us.  We all love cooking, us sisters were all raised to enjoy being in the kitchen.  When a new item is introduced to the table there is also a menu card for each sister for that new item.  When I added Greek Almond Cookies to the dessert table last year everyone was amazed how easy the recipe is. I got it from an actual Greek friend, Valerie.  The Cinnamon Crumb Cake is also easy to make and goes really well with a cup of coffee after dinner.

One year when my sister-in-law picked the Christmas dessert portion of our meal I gave her a lot of advice on recipes as she really isn't comfortable baking. I went to her home two days before Christmas and helped her make the traditional Red Velvet Cake. She did it really well and is now a pro!

Perhaps if you have a large family you can do something like our family does. We all enjoy our Christmas cooking tradition.

How to Make a Delicious Lamb and Feta Cheese Pizza

You will need:

For the Marinated Lamb -

  • 12 oz lamb, cut into strips
  • 1 garlic clove, crushed
  • 3 teaspoons oregano
  • 2 teaspoons soy sauce
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice

For the Pizza Crust -
  • 2 tablespoons instant yeast
  • 1 1/2 cups warm water
  • 4 cups cake flour
  • Pinch each of oregano, basil, thyme, onions salt, chervil, garlic powder, and salt
  • Pinch of freshly ground black pepper

For the Toppings -
  • 1 onion, sliced thinly
  • 3 oz mushrooms, sliced
  • 6 oz sun dried tomatoes, chopped
  • 4 oz Greek olives, pitted
  • 13 oz feta cheese, crumbled
  • 13 oz mozzarella, grated
  • Olive oil, for frying
How to make it:

Put the lamb in a glass bowl. Combine the marinade ingredients and pour them over the meat. Mix well, cover, and marinate for 2 hours in the refrigerator. Pour the warm water into a bowl, sprinkle the yeast on top, and leave it for 5 minutes. Add half the flour and all the seasonings. Stir until you have a smooth batter. Add another cup of the flour and stir until you have a dough ball.

Keep adding more flour, until you have a non-sticky dough. Knead it for 5 minutes, then cover it and leave it somewhere warm to rise. Punch it down, divide it in half, and roll each half into a 12 inch round. Leave it for 15 minutes to rise again.

Drain the lamb and fry it over high heat in the olive oil, until it is cooked. Take it out of the pan and let it cool.

Preheat the oven to 425 degrees F and grease 2 pizza pans or baking sheets. Put the dough circles on the pizza pans, pressing it until it covers the pans or baking sheets.

Arrange the lamb on top of the pizza crust, then the mushrooms, onions, tomatoes, olives and cheese. Bake for about 17 minutes, or until the cheese is melted and the dough is cooked and golden brown.
