In a large saucepan, combine the evaporated milk and sugar. Cook over medium heat, stirring constantly. Bring to a boil for 4 minutes.

Pour hot sugar mixture over the chocolate mixture and stir with a large spoon until well blended. Pour into prepared baking pan. Let cool. Cut into squares.

No-Bake Banana Split Dessert

4 large bananas

2 cups graham cracker crumbs

2 1/2 sticks of margarine, melted

3 cups crushed pineapple, drained

2 cups confectioners sugar

2 eggs

1 small package chopped nuts

1 large tub of Cool Whip

1 jar maraschino cherries

*optional* Chocolate Sauce

In a medium-sized bowl, combine the 1/2 stick of melted margarine and graham cracker crumbs. Spread mixture evenly into the bottom of a 9 x 13" baking pan and place in the freezer for 15 minutes. In a large bowl, combine the eggs, 2 cups of melted margarine and confectioners sugar. Mix those 3 ingredients together using a mixer for 10-15 minutes. Remove baking pan from freezer and spread this mixture over top of the graham cracker crumbs. Slice bananas on top and then add the drained crushed pineapple. Cover pineapple with Cool Whip and sprinkle chopped nuts and cherries on top. Cover pie and refrigerate for 6 hours before serving. If desired, you can serve chocolate sauce over top of the pie but don't add it until 15 minutes before serving the pie to your guests.

No-Bake Banana Pudding Dessert

1 (12 ounce) box vanilla wafers

4-5 bananas

2 (4-ounce) boxes vanilla or banana cream instant pudding mix

3 cups of cold milk

1 (14-ounce) can sweetened condensed milk

1 (14-ounce) tub Cool Whip, thawed

Line a 13 x 9" baking dish with a single or double layer of vanilla wafers, then add banana slices. In a large bowl, prepare instant pudding mixes according to box directions and using the 3 cups of cold milk; mix in the sweetened condensed milk and then fold in the thawed Cool Whip. Pour this mixture immediately over the sliced bananas and vanilla wafers. Refrigerate dessert for 4-6 hours before serving.

Best Fresh Salsa Recipe

Here is the best salsa recipe I have ever made.

My family does not even like regular jar or store bought salsa anymore. I use to make salsa and cook the ingredients on the stove but once was in a hurry and just used everything straight from the garden, after a little washing. The result was a flavor burst in my mouth with all the wonderful flavors that were not toned down by cooking them away.

Best Fresh Salsa Recipe

8 tomatoes

3 green peppers

4 jalapeno peppers (you can remove some or add some depending on your taste)

1 small onion

Garlic cloves or minced garlic

salt

Olive Oil

Parsley

Lemon or lime juice

Cut off the tops of the green peppers and remove seeds. Cut off the tops of the jalapenos but do not remove seeds. Cut the outer skin off the onion and cut in four sections.

Place these items in a food processor and run until everything is small. I usually do not leave big chunks of the jalapeno as small chopped bits blend better and give flavor throughout the salsa.

Drop in 1 teaspoon on minced garlic. You can use the stuff out of the jar from the store or put in 2 whole cloves.

Wash the tomatoes and cut off the tops and cut them in half our fourths and put them in the food processor on top of the already chopped up peppers and onions.

Process these until the tomatoes are well chopped. Open the food process and remove the container and put a strainer in your sink and pour the mixture from the processor into the strainer and let strain all the excess liquid from the tomatoes. I usually use my well washed hand in their to stir up the salsa and speed up the process but you can use a big spoon. When Most of the excess liquid is gone dump the strainer mixture into a bowl or container.

Add 1 teaspoon salt, 1 tablespoon dried parsley, 3 to 4 tablespoons lemon or lime juice. I prefer lime juice but once ran out and used lemon juice and it worked just as well. I use the bottled juice but it you have fresh it would be even better. Add 2 tablespoons of extra virgin olive oil.

Stir everything together with a spoon and quickly get out your chips and get some because as soon as your family knows you have homemade salsa made it will not be around for very long.

Pour most of the red bell pepper dressing over the couscous and stir well. Peel and grate a pair of carrots and add these. Cover and chill. Bring the salad back to room temperature to serve it. You can add some more dressing if you like. This would go well with baked cod or tilapia.

Cajun Potato Salad

This recipe serves four people. Cook two pounds of peeled potatoes and cut them into chunks. Chop four green onions and add these. You can reserve some of the sliced green part for garnish, if you want to. You can also add a chopped jalapeno chili if you like, or even two for a very spicy side dish.

Combine a tablespoon of mustard with three quarters of a cup of yogurt, a teaspoon of Cajun seasoning, and a dash of cayenne pepper in another bowl, and then season this dressing with salt and pepper.

Toss the potatoes and green onions with the Cajun dressing and sprinkle the remaining green onion over the top. Serve this delicious vegetable recipe with blackened salmon for an easy gourmet meal.

How to Make Venison Bacon

The spices and cure are what really make the venison bacon tasty, and preserve it. Buying a pre-made spice kit is the easiest way to go about making sure you have the right blend. Just about any place that sells sausage making equipment and accessories will have a venison bacon kit. The average price is around for a kit that produces 25 lbs of bacon. Not bad!

Before you start, make sure you have about 10 loaf pans ready (foil pans are easiest), cooking spray, wax paper, and a meat thermometer.

First grind the meat; double grind it to make sure the meats are thoroughly mixed. Use the fine blade for the second grinding. Put it in the bowl and add the seasoning and cure, mixing in water (your seasoning kit will tell you how much).

Spray the loaf pans with cooking spray and pack the meat into them. You want the meat to be about 2 inches deep. Cover the pans tightly with wax paper and store in the refrigerator (or the garage if it's cold enough) for 8 to 12 hours.

Spray the smoker rack with cooking spray to prevent sticking. Remove the meat from the pans and place it on the rack. You'll smoke the meat at 130 for 1 hour, then turn up the temperature to 160 and smoke for 2 more hours. After smoking, remove the meat from the rack and put it in the oven at 180 for 4 hours, or until the internal temperature of the meat reaches 155.

Allow the bacon to sit out until it reaches room temperature and then refrigerate it overnight. You can then slice it into strips. Package it into 1 lb packs and freeze for use throughout the year. Enjoy!

1/2 cup Self-raising Flour; sifted

1 can Condensed Milk

1 tsp Vanilla Essence

1 1/2 cups Dessicated Coconut

2 1/2 cups Pecans; coarsely chopped

1 cup Dried Apricots; chopped into small bits

1 1/2 cups Dates; coarsely chopped

300 g Candied Cherries; red and green; chopped

2 tbsp Icing Sugar; for decoration

Method:

Mix chopped pecans, apricots bits, dates and cherries together. Drizzle condensed milk over fruit mixture and keep stirring. Add in vanilla essence. Now add in dessicated coconut. Fold in sifted flour until no more flour lumps.

Spoon cake mixture into greased tube pan. Bake in preheated oven at 150°C for 20 minutes before upping heat to 170°C and bake for another 30 minutes.

Allow cake to cool a little before removing from pan. Dust cake lightly with icing sugar. Keep cake in air-tight container.

Yes! I did it! I love the confident feeling of learning something new.

Until yesterday I was sure of two edible mushrooms. Today I am sure of four. My two new delicacies are the Gem-studded puffball and the Pear-shaped puffball. I have a fifth under study.

When I gather mushrooms, I put each species in a separate paper bag. When I get home, I take them out of the paper bag and begin my visual study.

The mushroom under study right now is the fawn mushroom. I found one on a hike with "Wildman" Steve Brill last month. I have found it twice since, but did not eat it. I just studied the shape, how the gills were attached and the stem. "Wildman" has made replicas out of Sculpey - which is an excellent way to improve observation skills. It's also fun.

I am cautious enough to consult other mushroom identification guides, but "Wildman" has the best photos and his sculptures are accurate. I am now making a spore print and when I do sample this mushroom, it will be a piece the size of a green pea.

THE RECIPE:

Sautéed Gem-studded (Lycoperdon perlatum) or Pear-shaped (Lycoperdon pyriforme) mushrooms:

1. Remove mushrooms from paper bag, trim dirt and wipe with a cloth or paper towel

2. Do not wash or immerse in water. Do not salt. That makes the mushrooms tough

3. Cut the larger mushrooms into bite-size pieces

4. Coat with olive oil and one-half teaspoon of lemon or lime juice

5. Set pan over low heat, then add coated puffball mushrooms

6. Cook until tender

Puffballs are fragrant when picked and they do have a distinct flavor, but it is delicate. I enjoyed it as a simple side dish.

Christmas Dinner Traditions and Dessert Ideas

Christmas is my family's favorite time of year. We have many Christmas traditions that we've developed over the years.  One is that each year one of us daughters (mother and sister-in-laws) is responsible for a part of the dinner.  My favorite part to make is the Christmas desserts.

Our family is large, there are five sisters, four brothers and both parents still living. We also have a lot of wives, husbands, nieces and nephews mixed in. When we get together there are twenty seven people.  Each year one of us cooks for a different segment. We put the dinner segments in a hat. After dinner, after all the dishes are done and we're relaxing we choose what our dishes will be for the next year. The menu is broken up into appetizers, before and after dinner drinks (for the adults), meat, stuffing/potatoes (starch), vegetables, rolls, desserts. Two people are responsible for meat, two for stuffing/potatoes and two for vegetables. One for appetizers, one for before and after dinner drinks and one for desserts. And, now that there are ten of us every year one lucky girl gets a get out of jail free card, which means she doesn't have to cook the next year!

As I said earlier Christmas dessert is my favorite. I start cooking about a week in advance. I know everybody's favorites, and like to add a few new things.  I like to make lots of different types of desserts for the family. One of my favorites is Black Bottom Cup Cakes. Another is Greek Almond Cookies. These are super simple. Another favorite is definitely a Red Velvet Cake with Butter Cream Icing. It's my Grandmother's recipe and the family loves it. The Red Velvet Cake is the one thing we're guaranteed to have every year, regardless of who is assigned dessert duty.

I got it from an actual Greek friend, Valerie.  The Cinnamon Crumb Cake is also easy to make and goes really well with a cup of coffee after dinner.

One year when my sister-in-law picked the Christmas dessert portion of our meal I gave her a lot of advice on recipes as she really isn't comfortable baking. I went to her home two days before Christmas and helped her make the traditional Red Velvet Cake. She did it really well and is now a pro!

  • 6 oz sun dried tomatoes, chopped
  • 4 oz Greek olives, pitted
  • 13 oz feta cheese, crumbled
  • 13 oz mozzarella, grated
  • Olive oil, for frying
How to make it:

Put the lamb in a glass bowl. Combine the marinade ingredients and pour them over the meat. Mix well, cover, and marinate for 2 hours in the refrigerator. Pour the warm water into a bowl, sprinkle the yeast on top, and leave it for 5 minutes. Add half the flour and all the seasonings. Stir until you have a smooth batter. Add another cup of the flour and stir until you have a dough ball.

Keep adding more flour, until you have a non-sticky dough. Knead it for 5 minutes, then cover it and leave it somewhere warm to rise. Punch it down, divide it in half, and roll each half into a 12 inch round. Leave it for 15 minutes to rise again.

Drain the lamb and fry it over high heat in the olive oil, until it is cooked. Take it out of the pan and let it cool.

Preheat the oven to 425 degrees F and grease 2 pizza pans or baking sheets. Put the dough circles on the pizza pans, pressing it until it covers the pans or baking sheets.

Arrange the lamb on top of the pizza crust, then the mushrooms, onions, tomatoes, olives and cheese. Bake for about 17 minutes, or until the cheese is melted and the dough is cooked and golden brown.
