What You Need

  • 3 cups flour
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup shortening
  • 1 ½ cups sugar
  • 2 eggs
  • ¾ cup strawberry jam
  • ½ teaspoon almond flavoring
  • ¾ cups milled walnuts or pecans

How to Make It

Prepare a large baking sheet or pizza pan by coating it lightly with cooking spray. Set aside until needed.

In a large bowl you will combine the dry ingredients of flour, baking soda, and salt. Sift together to thoroughly combine and then set aside until needed.

Preheat your oven to 350 degrees Fahrenheit.

Using a large mixing bowl and an electric mixer you will add the shortening and the sugar and then cream together until the mixture is light and fluffy in texture.

Add the eggs one at a time while beating each until well blended. Add the strawberry jam and beat to combine well, or for about 30 to 45 seconds.

Gradually add the dry mixture while beating to combine with the strawberry mixture and then gradually add the milled walnuts or pecans.

Press this mixture onto the prepared baking sheet or pizza pan evenly. Form a raised rim around the crust by gently pinching up the edges as you work around the pizza.

Place the sweet dessert pizza crust into the preheated oven and bake for about 12 to 15 minutes or until the crust is a light brown in color.

Remove from oven and allow the dessert pizza crust to completely cool before adding your pizza fillings and toppings.

Filipino Recipes - Suman Moron (Dessert) Recipe - Pinoy Food

Suman Moron originated from Leyte, an island in the Visayas. It is a popular Filipino dessert served during fiestas and other special occasions. Luckily, I don't have to wait for any special celebrations to taste this delicacy because these are commonly sold outside the church during Sundays.

This recipe makes about 30 pieces of Suman Moron 4-inches long each.

Dessert

Ingredients:

  • 2 cups glutinous rice flour
  • 6 cups ordinary rice flour
  • 2 kilos grated coconut meat
  • 1 big can evaporated milk
  • ½ kilo white (refined) granulated sugar
  • 1 kilo muscovado sugar
  • 30 chocolate tableya, melted with 1/4 cup water
  • 1 bar cheddar cheese (julienned)
  • 1 cup chopped peanuts
  • 1 small bottle vanilla extract
  • 8 cups boiling water
  • about 30 pieces banana leaves, cut into rectangles (8″x10″)

Cooking Instructions:

  • In a basin, place the grated coconut meat and pour boiling water. Set aside. (Note: 8 cups of canned coconut milk can be used as alternative.)
  • Mix the 2 types of flour well until thoroughly incorporated. Divide the flour mixture equally into two parts.
  • Squeeze the grated meat when the coconut mixture is already cool enough to handle. Use a fine strainer to separate the coconut milk. Divide the coconut milk equally into two parts.
  • In a thick-bottomed pan, place ½ of the flour mixture and pour in one part coconut milk, muscovado sugar, melted chocolate, vanilla extract and peanuts. Mix well and place over medium heat. Keep on stirring while cooking the mixture. At first, uneven lumps will form. But as you keep stirring, the mixture will even out as it thickens. Turn off the heat when oil starts to come out. Set aside to cool.
  • To the second half of flour mixture, add the remaining coconut milk. Then pour about half of the white sugar and the evaporated milk. Mix thoroughly. Place in a separate pan and cook over medium heat while stirring continuously. Remove from the heat when the mixture is thickened. Set aside to cool.
  • Pass the banana leaves over the heat to make them supple. Then use the squeezed-dry coconut meat over the leaves.
  • Take a heaping tablespoonful of the first mixture (chocolate) and place on the banana leaf wrapper. Sprinkle a little cheese on it before rolling, with the banana leaf covering the mixture. Therefore, you hands won't be touching the mixture being rolled.
  • Take another heaping tablespoonful of the second mixture (milk) and do the same process.
  • Place the two cylinders (milk and chocolate) and roll to form a thicker cylinder with the two colors fused together.
  • Roll the banana leaf to wrap tightly and tie a string at both ends to secure.
  • Repeat the process until all of the two mixtures have been wrapped.
  • Steam for about 45 minutes to 1 hour.
  • Let cool before serving.

o Dip the first 18 Italian ladyfingers into the espresso
o Line the bottom of a 12 x 9 pan with the ladyfingers
o Sprinkle half of the chopped chocolate over the mixture
o Add a generous dusting of the cocoa on the mixture
o Set this aside
o Combine the egg yolks and ¾ cup of the sugar
o Mix this on high in a mixer for about ten minutes
o Mix the mascarpone by hand until it is completely mixed and lump free
o Set this aside
o Mix by a mixer or by hand the cream, 1/3 cup of sugar and the rum until it forms stiff peaks
o Add the mascarpone mix and whip this again until completely homogenous
o Spread half of the egg and cheese filling onto the ladyfingers in the pan
o Soak the rest of the ladyfingers in espresso and make a second layer over them
o Leave some spaces in between the ladyfingers and sprinkle the remaining filling evenly over the ladyfingers
o Lightly sprinkle this with more cocoa
o Wrap and refrigerate for about four to six hours
o When this is chilled, sprinkle it again with a light dusting of the cocoa
o Slice and serve with a spoon or spatula

An Easy Recipe for Boniatillo

This sweet potato pudding is popular during the holidays in Cuba. The pudding is flavored with cinnamon, cream, lime juice, vanilla and more and everybody will love the delicious flavor of this wonderful and traditional Cuban dessert. Chill it for a couple of hours or serve it hot. It tastes great either way! This recipe makes enough to serve four people.

What you will need:

  • 2 cups brown sugar
  • 1 1/2 lbs sweet potato
  • 2 limes
  • 1 stick cinnamon
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 3 egg yolks
  • 1 tablespoon butter
  • 1 tablespoon vanilla extract
  • 1/8 teaspoon ground cinnamon or grated cinnamon stick
  • Water, as needed
How to make it:

Peel and chop the sweet potato and cover it with water in a pan. Add a teaspoon of salt and boil it for twenty minutes or until tender. Drain the potato and mash it using a fork, blender, or food processor.

Peel the limes and save the fruit for another use. Put the peel in a big pan with the brown sugar, cinnamon stick, and two cups of water. Cook the mixture over a moderate heat until it reaches 250 degrees F, stirring it all the time. You will need a candy thermometer to gauge the temperature.

Take out the peel and cinnamon and turn the heat down to low. Add the mashed sweet potato and keep stirring the mixture until it is smooth. Take it off the heat. Beat the cream, butter, egg yolks, and a pinch of salt until smooth, and then add this to the sweet potato mixture.

Cook it over a low heat for a couple of minutes, then take the pan off the heat and stir in the vanilla. If the mixture is too runny, you can mix a quarter cup of cornstarch with a quarter cup of water and add this. Divide the sweet potato pudding between serving bowls and garnish each one with a little ground cinnamon.

No-Bake Banana Split Dessert

4 large bananas

2 cups graham cracker crumbs

2 1/2 sticks of margarine, melted

3 cups crushed pineapple, drained

2 cups confectioners sugar

2 eggs

1 small package chopped nuts

1 large tub of Cool Whip

1 jar maraschino cherries

*optional* Chocolate Sauce

In a medium-sized bowl, combine the 1/2 stick of melted margarine and graham cracker crumbs. Spread mixture evenly into the bottom of a 9 x 13" baking pan and place in the freezer for 15 minutes. In a large bowl, combine the eggs, 2 cups of melted margarine and confectioners sugar. Mix those 3 ingredients together using a mixer for 10-15 minutes. Remove baking pan from freezer and spread this mixture over top of the graham cracker crumbs. Slice bananas on top and then add the drained crushed pineapple. Cover pineapple with Cool Whip and sprinkle chopped nuts and cherries on top. Cover pie and refrigerate for 6 hours before serving. If desired, you can serve chocolate sauce over top of the pie but don't add it until 15 minutes before serving the pie to your guests.

No-Bake Banana Pudding Dessert

1 (12 ounce) box vanilla wafers

4-5 bananas

2 (4-ounce) boxes vanilla or banana cream instant pudding mix

3 cups of cold milk

1 (14-ounce) can sweetened condensed milk

1 (14-ounce) tub Cool Whip, thawed

Line a 13 x 9" baking dish with a single or double layer of vanilla wafers, then add banana slices. In a large bowl, prepare instant pudding mixes according to box directions and using the 3 cups of cold milk; mix in the sweetened condensed milk and then fold in the thawed Cool Whip. Pour this mixture immediately over the sliced bananas and vanilla wafers. Refrigerate dessert for 4-6 hours before serving.

Ingredients :

1/2 cup Self-raising Flour; sifted

1 can Condensed Milk

1 tsp Vanilla Essence

1 1/2 cups Dessicated Coconut

2 1/2 cups Pecans; coarsely chopped

1 cup Dried Apricots; chopped into small bits

1 1/2 cups Dates; coarsely chopped

300 g Candied Cherries; red and green; chopped

2 tbsp Icing Sugar; for decoration

Method:

Mix chopped pecans, apricots bits, dates and cherries together. Drizzle condensed milk over fruit mixture and keep stirring. Add in vanilla essence. Now add in dessicated coconut. Fold in sifted flour until no more flour lumps.

Spoon cake mixture into greased tube pan. Bake in preheated oven at 150°C for 20 minutes before upping heat to 170°C and bake for another 30 minutes.

Allow cake to cool a little before removing from pan. Dust cake lightly with icing sugar. Keep cake in air-tight container.

Christmas Dinner Traditions and Dessert Ideas

Christmas is my family's favorite time of year. We have many Christmas traditions that we've developed over the years.  One is that each year one of us daughters (mother and sister-in-laws) is responsible for a part of the dinner.  My favorite part to make is the Christmas desserts.

Our family is large, there are five sisters, four brothers and both parents still living. We also have a lot of wives, husbands, nieces and nephews mixed in. When we get together there are twenty seven people.  Each year one of us cooks for a different segment. We put the dinner segments in a hat. After dinner, after all the dishes are done and we're relaxing we choose what our dishes will be for the next year. The menu is broken up into appetizers, before and after dinner drinks (for the adults), meat, stuffing/potatoes (starch), vegetables, rolls, desserts. Two people are responsible for meat, two for stuffing/potatoes and two for vegetables. One for appetizers, one for before and after dinner drinks and one for desserts. And, now that there are ten of us every year one lucky girl gets a get out of jail free card, which means she doesn't have to cook the next year!

As I said earlier Christmas dessert is my favorite. I start cooking about a week in advance. I know everybody's favorites, and like to add a few new things.  I like to make lots of different types of desserts for the family. One of my favorites is Black Bottom Cup Cakes. Another is Greek Almond Cookies. These are super simple. Another favorite is definitely a Red Velvet Cake with Butter Cream Icing. It's my Grandmother's recipe and the family loves it. The Red Velvet Cake is the one thing we're guaranteed to have every year, regardless of who is assigned dessert duty.

I also make a Cinnamon Crumb Cake, a Chocolate Truffle with Raspberry Sauce and a Louisiana Roasted Pecan Pie.  All of these things make quite an impressive looking Christmas dessert buffet and everyone is able to find something that they really like.

Over the years we girls have shared recipes between us.  We all love cooking, us sisters were all raised to enjoy being in the kitchen.  When a new item is introduced to the table there is also a menu card for each sister for that new item.  When I added Greek Almond Cookies to the dessert table last year everyone was amazed how easy the recipe is. I got it from an actual Greek friend, Valerie.  The Cinnamon Crumb Cake is also easy to make and goes really well with a cup of coffee after dinner.

One year when my sister-in-law picked the Christmas dessert portion of our meal I gave her a lot of advice on recipes as she really isn't comfortable baking. I went to her home two days before Christmas and helped her make the traditional Red Velvet Cake. She did it really well and is now a pro!

Perhaps if you have a large family you can do something like our family does. We all enjoy our Christmas cooking tradition.
