Quick Italian Dessert Recipe - Tiramisu

o 30 Italian lady fingers that are divided
o 2 ½ cups of strong warm espresso
o 2 ounces of chopped chocolate
o Unsweetened cocoa used for dusting the dessert
o 6 egg yolks
o ¾ cup of white sugar
o 1 ¼ pounds of mascarpone cheese
o 2 cups of heavy cream
o 1/3 cup of white sugar
o 1 ½ tablespoons of dark rum

Directions for making Tiramisu Quick Italian Dessert Recipe:
o Dip the first 18 Italian ladyfingers into the espresso
o Line the bottom of a 12 x 9 pan with the ladyfingers
o Sprinkle half of the chopped chocolate over the mixture
o Add a generous dusting of the cocoa on the mixture
o Set this aside
o Combine the egg yolks and ¾ cup of the sugar
o Mix this on high in a mixer for about ten minutes
o Mix the mascarpone by hand until it is completely mixed and lump free
o Set this aside
o Mix by a mixer or by hand the cream, 1/3 cup of sugar and the rum until it forms stiff peaks
o Add the mascarpone mix and whip this again until completely homogenous
o Spread half of the egg and cheese filling onto the ladyfingers in the pan
o Soak the rest of the ladyfingers in espresso and make a second layer over them
o Leave some spaces in between the ladyfingers and sprinkle the remaining filling evenly over the ladyfingers
o Lightly sprinkle this with more cocoa
o Wrap and refrigerate for about four to six hours
o When this is chilled, sprinkle it again with a light dusting of the cocoa
o Slice and serve with a spoon or spatula

Award Winning Italian Meatballs

Here is my Italian meatball recipe. The recipe that won the award is called; "Rigatoni Pasta With Raisin Meatballs And Portabella Mushrooms Topped With A Fresh Tomato-Marsala Sauce."

Chef Vinny's Italian Meatballs

2 lb. Ground beef (chuck or regular) not lean

2 tsp of salt or more if you like

3 large garlic cloves minced

4 eggs

1 tsp of minced dry basil leafs

½ tsp of minced dried oregano

½ tsp of black pepper

¼ cup of fresh chopped parsley

¼ - ½ cup of plain breadcrumbs

¼ cup of grated fresh parmesan or Romano cheese

(Optional) ¼ cup of raisins makes great tasting meatballs!!

Mix all in large bowl with your hands and form meatballs. Place on an oven tray and bake at 350 degrees for 15-20 minutes or until they become firm and slightly brown. Don't over cook.

When done place all the meatballs into your favorite pasta tomato sauce and let simmer or medium heat until the meatballs are cooked all the way through. Serve with your favorite pasta. Enjoy!

Spaghetti sauce made from scratch is much nicer than anything you can get in a can or jar. Canned tomatoes feature in many authentic Italian recipes because they have such a strong and robust flavor. Combined with fresh tomatoes, as well as onions, garlic, herbs, beef, mushrooms and more, these result in a really great-flavored dish.

The best sauces need to simmer for a few hours, so the flavors can combine and blend properly so you will need to start cooking it long before you start cooking the pasta. Once you have tasted the following recipe, you will never want to use anything out of a can or jar again.

Authentic Sauce - Italian Spaghetti Sauce From Scratch

Peel two heads of garlic and chop and finally press each clove of garlic. Add these to a big pot, as well as a couple of chopped onions, a couple of chopped green bell peppers and a chopped bunch of celery. Throw in a pinch each of cayenne pepper, ground sage, oregano, basil, turmeric, garlic powder, white pepper, rosemary, thyme, red pepper flakes, and celery seed.

Turn the heat up and simmer the mixture for an hour. Turn the heat down to low and simmer it for two or three more hours. Add some sliced mushrooms half an hour before the end of the cooking time and serve it hot.

How To Serve It

The traditional way to serve this recipe is, of course, with spaghetti, but it is also good with penne, linguine, macaroni, or any other kind of pasta you like. You can either combine it with the pasta or serve it on top of a pile of hot spaghetti.

If you are not fond of pasta, why not serve it over a baked potato or mashed potatoes instead? Polenta, bulgur wheat, couscous, and rice are other options.

How To Store It

Make plenty because it keeps for a few days in the refrigerator. You can also freeze leftover sauce for a few months. The best way to do this is to use Ziploc bags and put two ladlefuls of sauce into each bag. This is one serving so thaw one bag of sauce for every person you want to feed.

The thawed sauce will taste as good as it did when it was freshly made and some people say it tastes nicer when you heat it back up after freezing it because the flavors will have intensified. Just warm it back up in a pan before serving it but do not let it boil.
